Old Bernese variety that is suitable for fresh consumption as well as for the production of special must. It is a variety found as a chance seedling around 1830, and is now well known throughout Switzerland. The apples originate from the organic farm “Mausacker” in Egnach, TG, and are collected from an untreated tall-stemmed orchard. They are fermented spontaneously using the ancestral method – no additives, no sulfates.
