This old heritage variety from the region of Basel has always been well known as a cider apple. The apples originate from the organic farm “Mausacker” in Egnachand are collected from an untreated tall-stemmed orchard. They are fermented spontaneously using the ancestral method – no additives, no sulfates.
Bottle fermentation with wild yeasts.
