The wild apple (Malus Sylvestris) is most probably the wild ancestor to our known cultured apple. These apples grow in a forestry garden in Lobsigen, BE. To guarantee the survival of this wild variety, the trees are cultivated in a plantation where the genetics from 300 wild apples and pears are maintained. After the mash has been pressed, the seeds are returned to the forestry. They are fermented spontaneously using the ancestral method – no additives, no sulfates.
